- Fresh spinach400g
- Sirene cheese (Bulgarian white brine cheese)250g
- Roasted red peppers (jarred or homemade), drained and chopped150g
- Eggs3 large
- Sour cream100g
- Butter, melted100g
- Vegetable oil50ml
- Salt1/4 teaspoon
- Black pepper1/4 teaspoon

Preheat oven to 180°C (350°F). Grease a round baking dish.

Wash and finely chop the spinach. Squeeze out excess water.

Chop the roasted red peppers.

Crumble the sirene cheese into a bowl. Add the chopped spinach, chopped red peppers, eggs, sour cream, salt, and pepper. Mix well.

Unroll the filo dough. Keep it covered with a damp cloth.

Lay one sheet of filo dough in the greased baking dish. Brush with melted butter and oil mixture.

Repeat layering and brushing with filo sheets until about half the dough is used.

Spread the spinach, sirene, and red pepper filling evenly over the layered filo.

Layer the remaining filo sheets on top, brushing each with the butter and oil mixture.

Tuck the edges and brush the top layer generously.

Score the top into serving portions.
