A classic Bulgarian sesame bread, soft and slightly sweet, perfect for any meal. This traditional recipe uses simple ingredients to create a wonderfully aromatic and fluffy bread.

- All-purpose flour500g
- Warm water250ml
- Active dry yeast7g
- Sugar1 tbsp
- Salt1 tsp
- Vegetable oil3 tbsp
- Egg1 (for wash)
- Sesame seeds50g (for topping)

Activate yeast: In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.

Mix dough: In a large bowl, combine flour and salt. Add the foamy yeast mixture and vegetable oil. Mix until a shaggy dough forms.

Knead dough: Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.

First rise: Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

Shape the bread: Punch down the dough and shape it into a round loaf. Place on a baking sheet lined with parchment paper.

Second rise: Cover the loaf and let it rise for another 30-45 minutes.

Preheat oven: Preheat oven to 190°C (375°F).

Egg wash and sesame seeds: Whisk the egg with a tablespoon of water. Brush the top of the loaf with the egg wash and sprinkle generously with sesame seeds.

Bake: Bake for 30-35 minutes, or until golden brown and sounds hollow when tapped.

Cool: Let the bread cool on a wire rack before slicing.
