
Classic Semolina Halva (Gris Halva)

A rich and comforting dessert made from toasted semolina flour cooked in a fragrant syrup, often flavored with nuts and spices. This is the traditional, authentic version.

- Semolina flour1 cup
- Ghee or unsalted butter1/2 cup
- Sugar1 cup
- Water2 cups
- Cardamom pods, crushed3-4
- Almonds, slivered or whole1/2 cup

In a saucepan, combine sugar, water, and crushed cardamom pods. Bring to a boil, then reduce heat and simmer for 5-7 minutes until slightly thickened. Remove cardamom pods.

In a separate heavy-bottomed pan, melt ghee or butter over medium heat. Add semolina flour and toast, stirring constantly, until it turns a deep golden brown and becomes fragrant, about 10-15 minutes. Be careful not to burn it.

Add slivered almonds to the semolina and toast for another 2-3 minutes until lightly golden.

Slowly and carefully pour the hot sugar syrup into the toasted semolina mixture while stirring continuously to avoid lumps. The mixture will bubble vigorously.

Continue to cook and stir over low heat until the halva thickens and starts to pull away from the sides of the pan, about 5-8 minutes.

Add salt and mix well. Spoon the halva into serving bowls or a mold. Let it set for at least 15-20 minutes before serving.
