    For the chocolate crepes: Whisk together flour, cocoa powder, sugar, and salt. In a separate bowl, whisk milk, eggs, and melted butter. Gradually add wet ingredients to dry ingredients, whisking until smooth. Let batter rest for 30 minutes.

    Cook chocolate crepes as described in the classic recipe, until golden brown on both sides.

    For the ganache: Heat heavy cream until simmering. Pour over chopped dark chocolate in a bowl. Let sit for 5 minutes, then whisk until smooth. Let cool slightly.

    If using fresh cherries, you can macerate them with a tablespoon of sugar and optional Kirsch. If using preserved cherries, drain them well.

    Assemble the cake: Spread a layer of chocolate ganache over each crepe. Scatter a layer of cherries over the ganache. Stack the filled crepes one on top of another.
