Traditional Ukrainian katmi, also known as varenyky, are half-moon shaped dumplings typically filled with potatoes, cheese, or fruit. This classic version features a simple dough and a hearty potato filling, served with sour cream and fried onions.

For the dough: Whisk together flour and salt. In a separate bowl, whisk the egg and water. Gradually add the wet ingredients to the dry ingredients, mixing until a shaggy dough forms. Knead on a floured surface for 5-7 minutes until smooth and elastic. Cover and let rest for 30 minutes.

For the filling: Boil potatoes until tender. Drain and mash with butter and salt until smooth. Let cool.

For the topping: Finely chop the onion and sauté in a little oil or butter until golden brown and caramelized.

Assemble the katmi: Roll out the dough thinly on a floured surface. Cut out circles using a glass or cookie cutter. Place a teaspoon of potato filling in the center of each circle. Fold the dough in half to create a crescent shape, pressing the edges firmly to seal. Crimp with a fork if desired.

Boil the katmi: Bring a large pot of salted water to a boil. Carefully add the katmi in batches, ensuring not to overcrowd the pot. Cook for 5-7 minutes after they float to the surface, or until the dough is cooked through.

Serve: Drain the cooked katmi and toss gently with a little melted butter. Serve immediately, topped with sour cream, fried onions, and fresh dill.
