Activate yeast in warm milk with a pinch of sugar. Let sit for 10 minutes until foamy.

In a large bowl, combine flour, remaining sugar, and salt. Make a well in the center.

Pour the yeast mixture into the well. Add the egg and softened butter.

Mix ingredients until a soft dough forms. Knead on a floured surface for 8-10 minutes until smooth and elastic.

Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

While dough rises, crumble the sirene cheese in a bowl. Mix well.

Punch down the risen dough. Divide into 12 equal portions.

Roll each portion into a ball, then flatten into a disc. Place about 2 tbsp of cheese filling in the center of each disc.

Shape each pastry into a crescent or roll it up. Place on a baking sheet lined with parchment paper.

Cover the pastries and let them rest for 20 minutes.

Preheat oven to 180°C (350°F).

Brush pastries with egg yolk wash and sprinkle with sesame seeds.
