- Carrots2 medium
- Celery stalks2
- Potatoes2 medium
- Onion1 medium
- Garlic cloves2
- Orzo pasta120g
- Bay leaf1

- Fresh parsleyfor garnish

Cut chicken thighs into bite-sized pieces. Season with salt and pepper.

Heat olive oil in a large pot over medium-high heat. Sear the chicken pieces until lightly browned on all sides. Remove chicken and set aside.

Add diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes until softened.

Add minced garlic and cook for 1 minute until fragrant.

Pour in water or broth, scraping up any browned bits from the bottom of the pot. Add diced potatoes, bay leaf, and the seared chicken.

Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until potatoes and chicken are cooked through.

Add the orzo pasta to the simmering soup and cook for 8-10 minutes, or according to package directions, until al dente.

Remove the bay leaf. Adjust seasoning with salt and pepper.
