- Dried white beans (e.g., Great Northern or Cannellini)500g
- Onion2 large
- Carrots3 medium
- Bell pepper (red or green)1 large
- Tomato paste2 tbsp
- Mint (dried)1 tsp
- Savory (dried)1 tsp
- Paprika (sweet)1 tsp
- Olive oil4 tbsp
- Water2 liters
- Saltto taste
- Black pepperto taste

Soak the dried beans in cold water overnight. Drain and rinse.

In a large pot, combine the soaked beans with fresh water. Bring to a boil, then reduce heat and simmer for about 1-1.5 hours, or until beans are tender. Skim off any foam.

While beans are simmering, finely chop the onion, carrots, and bell pepper.

In a separate pan, heat the olive oil over medium heat. Sauté the chopped onion until softened, about 5-7 minutes.

Add the carrots and bell pepper to the pan and cook for another 5-7 minutes until slightly tender.

Stir in the tomato paste, dried mint, dried savory, and paprika. Cook for 1-2 minutes until fragrant.

Add the sautéed vegetables and spices to the pot with the cooked beans. Stir well.

Continue to simmer the soup for another 30-45 minutes, allowing the flavors to meld. Add more water if the soup becomes too thick.

Season generously with salt and black pepper to taste.
