- Lamb shoulder800g
- Onions2 medium
- Carrots2 medium
- Parsnips1 medium
- Celery root1 small piece
- Garlic3 cloves
- Canned diced tomatoes400g
- Red wine (dry)150ml
- Lamb broth or water1.8 liters
- Olive oil3 tbsp
- Smoked paprika1.5 tbsp
- Dried thyme1 tsp
- Saltto taste
- Black pepperto taste
- Rosemary sprigfor garnish

Cut lamb into cubes. Heat olive oil in a large pot and brown the lamb on all sides.

Add chopped onions and sauté until translucent.

Add chopped carrots, parsnips, celery root, and minced garlic. Cook for 5-7 minutes.

Stir in smoked paprika and dried thyme.

Add diced tomatoes and cook for 2 minutes.

Pour in the red wine and let it bubble and reduce slightly for 1-2 minutes.

Add the lamb broth or water. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours, or until lamb is tender.
