Peel and dice potatoes, carrots, onion, parsnip, and celery root. Dice tomatoes.

Heat olive oil in a large pot over medium heat. Add diced onion and sauté until softened, about 5 minutes.

Add diced carrots, parsnip, and celery root to the pot and cook for another 7-8 minutes, stirring occasionally.

Stir in the smoked paprika and cook for 1 minute until fragrant.

Add diced tomatoes and potatoes to the pot. Stir well.

Pour in the vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 25-30 minutes, or until all vegetables are tender.
