- Ground Beef400 g
- Jarred Roasted Red Peppers150 g
- Onion Soup Mix1 packet
- Eggs2 large
- Shredded Cheese (e.g., Cheddar or Gouda)150 g
- Milk100 ml
- Vegetable Oil2 tbsp
- Saltto taste
- Black Pepperto taste

Slice zucchini into 0.5 cm thick rounds. Lightly sauté in oil until slightly tender. Set aside.

Brown the ground beef in a pan. Drain excess fat. Stir in the chopped roasted red peppers and the onion soup mix with water according to packet instructions.

In a baking dish, layer the zucchini and the meat sauce. Top with the shredded cheese.

Whisk together eggs and milk. Pour over the cheese layer.

Bake at 190°C (375°F) for 30-35 minutes, until bubbly and golden.
