- Boneless, skinless chicken breast1 lb
- Long-grain white rice1.5 cups
- Chicken broth3 cups
- Onion1/2 medium
- Bell pepper (any color)1/2
- Garlic2 cloves
- Olive oil1 tbsp
- Dried parsley1 tsp
- Saltto taste
- Black pepperto taste

Cut the chicken breast into bite-sized pieces. Finely chop the onion, bell pepper, and mince the garlic.

Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.

Add the chopped onion and bell pepper to the skillet. Sauté until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute until fragrant.

Stir in the rice and dried parsley. Toast for 1-2 minutes.

Pour in the chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

Return the chicken to the skillet. Stir everything together, cover, and continue to simmer for another 5-10 minutes, or until the rice is tender and the liquid is absorbed.
