Ingredients
- ripe bananas2 large
- all-purpose flour1 1/2 cups
- granulated sugar3/4 cup
- vegetable oil1/3 cup
- eggs1 large
- baking soda1 teaspoon
- salt1/4 teaspoon
- cinnamon1/2 teaspoon

Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.

In a large bowl, mash the ripe bananas with a fork.

Stir in the vegetable oil, sugar, and egg until combined.

In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.

Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.

Divide the batter evenly among the muffin cups, filling each about two-thirds full.

Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
