Ingredients
- Cooked day-old rice4 cups
- Eggs2 large
- Vegetable oil2 tablespoons
- Soy sauce2 tablespoons
- Sesame oil1 teaspoon
- Green onions2 stalks, chopped
- Garlic1 clove, minced
- Saltto taste
- Black pepperto taste

Whisk eggs with a pinch of salt and pepper. Scramble them in a lightly oiled wok or skillet until just cooked. Remove from wok and set aside.

Add remaining vegetable oil to the wok over medium-high heat. Add minced garlic and stir-fry until fragrant (about 30 seconds).

Add the day-old rice to the wok. Break up any clumps and stir-fry for 3-5 minutes until heated through and slightly toasted.

Push the rice to one side of the wok. Pour the scrambled eggs back into the empty side and break them up into smaller pieces.

Add soy sauce and sesame oil. Stir everything together to combine and coat the rice evenly.

Stir in most of the chopped green onions. Season with salt and pepper to taste.
