- Cod fillets4 (6 oz each)
- White miso paste2 tbsp
- Butter3 tbsp, softened
- Mirin1 tbsp
- Sesame oil1 tsp
- Saltto taste
- Black pepperto taste
- Scallionsfor garnish, chopped
- Sesame seedsfor garnish, toasted

Preheat oven to 400°F (200°C).

In a small bowl, combine softened butter, white miso paste, mirin, and sesame oil. Mix until smooth.

Place cod fillets in a baking dish.

Season cod lightly with salt and pepper (miso is salty).

Spread the miso butter mixture evenly over the top of each cod fillet.

Bake for 12-15 minutes, or until cod is cooked through and the glaze is lightly caramelized.

Garnish with chopped scallions and toasted sesame seeds before serving.
