Ingredients
- All-purpose flour3 cups
- Water1.5 cups
- Ground pork1 lb
- Chinese chives1 cup, finely chopped
- Ginger1 tbsp, minced
- Garlic2 cloves, minced
- Soy sauce2 tbsp
- Sesame oil1 tbsp
- Shaoxing wine1 tbsp
- Salt1 tsp
- White pepper0.5 tsp

Make the dough: Combine flour and water, knead until smooth. Let rest for 30 minutes.

Prepare the filling: Mix ground pork, chives, ginger, garlic, soy sauce, sesame oil, Shaoxing wine, salt, and white pepper.

Roll out the dough thinly and cut into small rounds for wrappers.

Fill each wrapper with about 1 tablespoon of filling and fold into a crescent shape, sealing the edges.

Boil dumplings in water until they float and are cooked through (about 5-7 minutes). Alternatively, pan-fry after boiling for a crispy bottom.
