Ingredients
- Pork shoulder1 lb
- Baguettes4
- Daikon radish1/2 cup, julienned
- Carrots1/2 cup, julienned
- Rice vinegar1/4 cup
- Sugar2 tbsp
- Fish sauce2 tbsp
- Soy sauce1 tbsp
- Garlic2 cloves, minced
- Lemongrass1 stalk, minced
- Mayonnaise1/4 cup
- Cucumber1/2, sliced
- Cilantro sprigs1/4 cup
- Jalapeño1, sliced
- Saltto taste

Marinate pork: Combine fish sauce, soy sauce, minced garlic, minced lemongrass, 1 tbsp sugar, salt, and pepper. Marinate thinly sliced pork shoulder for at least 30 minutes.

Pickle vegetables: Combine julienned daikon and carrots with rice vinegar, remaining 1 tbsp sugar, and a pinch of salt. Let sit for at least 30 minutes.

Grill pork: Grill marinated pork slices until cooked through and slightly charred.

Prepare baguettes: Slice baguettes lengthwise, leaving one side attached. Lightly toast if desired.

Assemble Banh Mi: Spread mayonnaise on the inside of the baguette. Layer grilled pork, pickled vegetables, cucumber slices, cilantro sprigs, and jalapeño slices.
