Ingredients
- Mixed vegetables (potatoes, cauliflower, peas, carrots, bell peppers)3 cups, chopped
- Onions, finely chopped2 medium
- Tomatoes, pureed2 cups
- Ginger-garlic paste2 tbsp
- Pav Bhaji Masala3 tbsp
- Turmeric powder1/2 tsp
- Red chili powder1 tsp
- Cumin seeds1 tsp
- Butter5 tbsp
- Oil2 tbsp
- Saltto taste

- Paneer, crumbled1 cup
- Pav (bread rolls)8
- Fresh coriander, chopped (for garnish)2 tbsp

Steps

Boil and mash the mixed vegetables until soft. Set aside.

Heat oil and 1 tbsp butter in a large pan. Add cumin seeds and let them splutter.

Add chopped onions and sauté until golden brown.

Add ginger-garlic paste and sauté for a minute.

Add pureed tomatoes, turmeric powder, red chili powder, and salt. Cook until oil separates.

Add the mashed vegetables and Pav Bhaji masala. Mix well. Add water as needed.

Cook for 10 minutes, stirring occasionally.

Gently fold in the crumbled paneer and cook for another 3-5 minutes, until the paneer is heated through.

Toast the pav on a tawa with butter until golden brown.

Serve the hot paneer bhaji garnished with butter, coriander, and a lemon wedge, with the toasted pav.
