- All-purpose flour250g
- Baking soda1 tsp
- Salt1/4 tsp
- Butter, softened125g
- Sugar200g
- Eggs2 large
- Apricot jam2 tbsp
- Milk180ml
- Vinegar1 tsp
- Heavy cream200ml
- Butter100g
- Brown sugar150g
- Strong brewed Rooibos tea100ml
- Water50ml

Prepare the Malva pudding cake batter as per the Traditional Malva Pudding recipe.

Bake the pudding in a greased and floured dish at 180°C (350°F) for 30-40 minutes.

While the pudding bakes, prepare the Rooibos caramel sauce: In a saucepan, combine heavy cream, butter, brown sugar, strong brewed Rooibos tea, and water. Heat gently, stirring until butter and sugar are dissolved.

Bring the sauce to a simmer and cook for 5-7 minutes, allowing it to thicken slightly and the Rooibos flavor to infuse.

Once the pudding is out of the oven, poke holes all over the top. Pour the hot Rooibos caramel sauce evenly over the hot pudding.
