Ingredients
- Cooked Chickpeas2 cans (15 oz each), drained and rinsed
- Onion1/4 cup, finely chopped
- Garlic2 cloves, minced
- Fresh Parsley1/4 cup, chopped
- Fresh Cilantro1/4 cup, chopped
- Cumin1 tsp
- Coriander1/2 tsp
- Baking Powder1/2 tsp
- Saltto taste
- Black Pepperto taste
- Olive Oil1 tbsp

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a food processor, combine cooked chickpeas, onion, garlic, parsley, cilantro, cumin, and coriander.

Pulse until a coarse mixture forms. Add olive oil and pulse a few more times.

Stir in baking powder, salt, and pepper.

Form small balls or flatten into mini patties.

Place on the prepared baking sheet.
