Ingredients

  • Cooked Chickpeas2 cans (15 oz each), drained and rinsed
  • Onion1/4 cup, finely chopped
  • Garlic2 cloves, minced
  • Fresh Parsley1/4 cup, chopped
  • Fresh Cilantro1/4 cup, chopped
  • Cumin1 tsp
  • Coriander1/2 tsp
  • Baking Powder1/2 tsp
  • Saltto taste
  • Black Pepperto taste
  • Olive Oil1 tbsp

Steps

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a food processor, combine cooked chickpeas, onion, garlic, parsley, cilantro, cumin, and coriander.

    Pulse until a coarse mixture forms. Add olive oil and pulse a few more times.

    Stir in baking powder, salt, and pepper.

    Form small balls or flatten into mini patties.
