
Classic Hummus

A traditional and creamy hummus made with tahini, chickpeas, lemon juice, and garlic, perfect as a dip or spread.

Ingredients
- Chickpeas (canned or cooked)2 cans (15 oz each)
- Tahini1/2 cup
- Lemon juice (freshly squeezed)1/4 cup
- Garlic cloves2-3
- Ice water1/4 cup
- Olive oil2 tbsp (for blending) + more for serving
- Salt1 tsp
- Cumin (optional)1/2 tsp
- Paprika (for garnish)pinch
- Fresh parsley (chopped, for garnish)1 tbsp

Drain and rinse the chickpeas. Reserve some for garnish if desired.

In a food processor, combine tahini and lemon juice. Process for 1 minute until smooth and creamy.

Add garlic cloves and salt (and cumin, if using). Process for another minute until garlic is finely minced.

Add half of the chickpeas to the food processor. Blend for 1-2 minutes until very smooth.

With the food processor running, slowly drizzle in the ice water and olive oil until the hummus is light and fluffy.

Add the remaining chickpeas and process until the hummus reaches your desired consistency. You may need to scrape down the sides of the bowl.

Taste and adjust seasoning if needed. Transfer hummus to a serving bowl.

Create a swirl on top with a spoon, drizzle generously with olive oil, and sprinkle with paprika and chopped parsley. Garnish with reserved chickpeas if desired.
