Ingredients
- Chickpeas (canned or cooked)2 cans (15 oz each)
- Tahini1/3 cup
- Roasted red peppers (jarred, drained)1/2 cup
- Lemon juice (freshly squeezed)2 tbsp
- Garlic cloves1-2
- Olive oil2 tbsp (for blending) + more for serving
- Salt3/4 tsp
- Red pepper flakes1/4 tsp (or to taste)
- Water2-4 tbsp

Drain and rinse the chickpeas.

In a food processor, combine tahini and lemon juice. Process for 1 minute.

Add garlic, salt, and red pepper flakes. Process until garlic is minced.

Add the drained roasted red peppers and half of the chickpeas. Process until smooth.

With the food processor running, slowly add ice water and olive oil until the hummus is creamy and light.

Add the remaining chickpeas and process until desired consistency is reached. Scrape down sides as needed.

Taste and adjust seasoning. Transfer to a serving bowl.

Drizzle with olive oil, garnish with a few small pieces of roasted red pepper and a pinch of red pepper flakes.
