Ingredients
- Black beans, canned, rinsed and drained2 cans (15 oz each)
- Corn kernels, fresh or frozen1/2 cup
- Red bell pepper, finely diced1/4 cup
- Chipotle peppers in adobo sauce, minced1-2
- Lime juice1 tablespoon
- Cilantro, chopped2 tablespoons
- Breadcrumbs1/3 cup
- Egg, lightly beaten1
- Cumin1 teaspoon
- Salt1/2 teaspoon
- Black pepper1/4 teaspoon
- Olive oil2 tablespoons
- Burger buns4

In a bowl, mash the black beans until mostly broken down.

Stir in the corn, diced red bell pepper, minced chipotle peppers, lime juice, chopped cilantro, breadcrumbs, beaten egg, cumin, salt, and pepper. Mix until well combined.
