Ingredients
- Chicken breast, boneless, skinless4 (6 oz each)
- All-purpose flour1 cup
- Eggs2 large
- Breadcrumbs, Panko or Italian-style1.5 cups
- Parmesan cheese, grated1/2 cup
- Marinara sauce2 cups
- Mozzarella cheese, shredded or sliced8 oz
- Olive oil1/4 cup
- Saltto taste

Preheat oven to 400°F (200°C).

Pound chicken breasts to about 1/2-inch thickness.

Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with 1/4 cup Parmesan cheese.

Dredge each chicken cutlet in flour, then dip in egg, and finally coat with breadcrumb mixture.

Heat olive oil in a large skillet over medium-high heat. Fry chicken cutlets for 2-3 minutes per side until golden brown.

Place fried chicken cutlets in a baking dish.

Spoon marinara sauce over each chicken cutlet.
