Ingredients
- Butter1/2 cup
- Chocolate sandwich cookies (like Oreos), crushed2 cups
- Shredded coconut1/4 cup
- Cream cheese, softened4 ounces
- Powdered sugar1/2 cup
- Vanilla extract1 teaspoon
- Semi-sweet chocolate chips1 cup
- Vegetable oil1 tablespoon

For the base: Melt 1/2 cup butter in a microwave-safe bowl. Stir in crushed chocolate sandwich cookies and coconut until combined. Press mixture evenly into the bottom of an ungreased 8x8 inch pan.

For the filling: Beat together softened cream cheese, powdered sugar, and vanilla extract until smooth. Spread evenly over the base.

For the topping: Melt semi-sweet chocolate chips and vegetable oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.

Pour the chocolate mixture over the filling and spread evenly. Chill in the refrigerator for at least 30 minutes, or until firm. Cut into bars.
