- All-purpose flour1.5 cups

Preheat oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.

In a large bowl, cream together butter and sugar until light and fluffy.

Beat in eggs one at a time, then stir in vanilla extract.

In a separate bowl, whisk together flour and baking powder.

Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.

Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.

Once cooled, cut the cake into 1-inch cubes.

Prepare the chocolate icing: In a saucepan, combine powdered sugar, cocoa powder, butter, and milk. Heat over medium heat, stirring constantly, until smooth and thickened.

Place desiccated coconut in a shallow dish.

Dip each cake cube into the chocolate icing, ensuring it's fully coated. Let excess icing drip off.

Immediately roll the iced cake cube in the desiccated coconut until evenly coated.

Place the coated Lamingtons on a wire rack to set. Allow the icing to firm up before serving.
