Ingredients
- Mascarpone cheese500g
- Eggs (yolks)6 large
- Granulated sugar150g
- Ladyfingers (Savoiardi)300g
- Strong brewed coffee (espresso)300ml
- Dark rum or Marsala wine2 tbsp
- Unsweetened cocoa powder3 tbsp
- Saltpinch

Whisk egg yolks and sugar in a heatproof bowl over a double boiler until pale and thickened. Remove from heat and let cool.

Gently fold the mascarpone cheese into the cooled yolk mixture until smooth.

Brew strong coffee and let it cool. Stir in rum or Marsala wine.

Quickly dip ladyfingers into the coffee mixture, one by one, and arrange them in a single layer in the bottom of a serving dish.

Spread half of the mascarpone cream mixture over the ladyfingers.

Repeat the ladyfinger dipping and layering process.

Spread the remaining mascarpone cream evenly over the second layer of ladyfingers.

Cover and refrigerate for at least 4 hours, preferably overnight.

Just before serving, dust the top generously with unsweetened cocoa powder.
