Ingredients
- Mascarpone cheese500g
- Eggs (yolks)6 large
- Granulated sugar150g
- Dark chocolate (70% cocoa)100g
- Ladyfingers (Savoiardi)300g
- Strong brewed coffee (espresso)300ml
- Dark rum or coffee liqueur2 tbsp
- Unsweetened cocoa powder3 tbsp
- Saltpinch
Steps

Melt dark chocolate gently and let it cool slightly.

Whisk egg yolks and sugar in a heatproof bowl over a double boiler until pale and thickened. Remove from heat and let cool.

Gently fold the mascarpone cheese into the cooled yolk mixture until smooth.

Fold the slightly cooled melted chocolate into the mascarpone mixture until well combined.

Brew strong coffee and let it cool. Stir in rum or coffee liqueur.

Quickly dip ladyfingers into the coffee mixture and arrange them in a single layer in the bottom of a serving dish.

Spread half of the chocolate mascarpone cream mixture over the ladyfingers.

Repeat the ladyfinger dipping and layering process.

Spread the remaining chocolate mascarpone cream evenly over the second layer of ladyfingers.

Cover and refrigerate for at least 4 hours, preferably overnight.

Just before serving, dust the top generously with unsweetened cocoa powder and optionally add chocolate shavings.
