Prepare the croutons: Toss baguette cubes with a little olive oil, salt, and pepper. Bake at 375°F (190°C) until golden brown and crisp.

Grill the chicken: Season chicken breasts with salt and pepper. Grill or pan-sear until cooked through. Let rest, then slice.

Make the dressing: In a bowl, mash garlic and anchovy fillets into a paste. Whisk in egg yolk, Dijon mustard, lemon juice, and Worcestershire sauce. Slowly drizzle in olive oil while whisking constantly until emulsified. Stir in grated Parmesan cheese.

Prepare the lettuce: Wash and chop romaine lettuce into bite-sized pieces.
