Ingredients
- Ground beef1 lb
- Onion, chopped1/2
- Taco seasoning1 packet
- Canned enchilada sauce15 oz
- Corn tortillas8
- Shredded cheddar cheese1.5 cups
- Saltto taste
- Black pepperto taste
- Optional: Sliced black olivesfor topping

Brown ground beef with chopped onion in a skillet until cooked through. Drain excess fat. Stir in taco seasoning and a little water according to packet directions. Season with salt and pepper.

Warm corn tortillas slightly to make them pliable. You can lightly fry them in a little oil for better texture if desired.

Spread a thin layer of enchilada sauce on the bottom of a baking dish.

Fill each tortilla with the ground beef mixture and some cheese. Roll them up and place seam-side down in the baking dish.

Pour the remaining enchilada sauce over the rolled tortillas. Top generously with the remaining cheese and optional olives.

Bake at 350°F (175°C) for 20-25 minutes, until heated through and cheese is melted and bubbly.
