Ingredients

  • Pork tenderloin1 lb
  • Soy sauce2 tbsp
  • Cornstarch1 tsp
  • Vegetable oil2 tbsp
  • Garlic powder1 tsp
  • Ginger powder1/2 tsp
  • Eggs2
  • Pre-shredded coleslaw mix4 cups
  • Hoisin sauce3 tbsp
  • Water2 tbsp
  • Green onions2, sliced
  • Mandarin pancakes or lettuce wraps12-16

Steps

    Slice pork thinly. Toss with soy sauce and cornstarch.

    Scramble eggs in a hot wok with 1 tsp oil. Remove and set aside.

    Add remaining oil to the wok. Add pork and stir-fry until cooked. Add garlic powder and ginger powder, stir for 30 seconds.

    Add coleslaw mix and stir-fry until tender-crisp.

    In a small bowl, mix hoisin sauce and water.

    Return pork and scrambled eggs to the wok. Pour sauce over and toss to coat.

    Stir in green onions.

    Serve immediately with pancakes or lettuce wraps.
