- Zucchini1 lb
- Potatoes1 lb
- Onion1/2 medium
- Eggs2 large
- Matzo meal or breadcrumbs1/4 cup
- Salt1 teaspoon
- Black pepper1/2 teaspoon
- Vegetable oil for frying1/2 cup
- Greek yogurt or sour cream for servingoptional

Grate the zucchini, potatoes, and onion. Squeeze out excess liquid from the zucchini and potato mixture using cheesecloth or a clean kitchen towel.

In a bowl, combine the grated vegetables, eggs, matzo meal (or breadcrumbs), salt, and pepper. Mix well.

Heat oil in a skillet over medium-high heat.
