Ingredients
- Onions3 large
- Gram flour (besan)1 cup
- Rice flour2 tbsp
- Ginger-garlic paste1 tsp
- Green chilies1-2, finely chopped
- Coriander leaves2 tbsp, chopped
- Cumin seeds1 tsp
- Turmeric powder1/2 tsp
- Red chili powder1/2 tsp
- Saltto taste
- Wateras needed
- Oil for deep fryingsufficient
Steps

Thinly slice the onions and place them in a bowl. Add salt and mix well. Let them sit for 5-10 minutes to release their moisture.

Add gram flour, rice flour, ginger-garlic paste, chopped green chilies, coriander leaves, cumin seeds, turmeric powder, and red chili powder to the onions. Mix everything together. The mixture should be thick and hold the onions together; add a tablespoon or two of water only if absolutely necessary to bind.

Heat oil in a deep pan or kadai over medium-high heat for deep frying.

Carefully drop small portions of the onion mixture into the hot oil, ensuring not to overcrowd the pan. Fry them in batches.

Fry for 5-7 minutes, turning occasionally, until the bhajis are golden brown and crispy.

Remove the bhajis from the oil using a slotted spoon and drain them on paper towels.

Serve hot with your favorite chutney or sauce.
