Ingredients
- All-purpose flour (Maida)2 cups
- Potatoes3 medium
- Onion1 small, finely chopped
- Green chilies1-2, finely chopped
- Ginger1 tsp, grated
- Cilantro2 tbsp, chopped
- Garam masala1/2 tsp
- Cumin powder1/2 tsp
- Red chili powder1/4 tsp
- Saltto taste

Boil and mash the potatoes until smooth. Let them cool.

In a bowl, combine mashed potatoes, chopped onion, green chilies, grated ginger, cilantro, garam masala, cumin powder, red chili powder, and salt. Mix well.

In another bowl, prepare the dough by mixing flour with a pinch of salt and gradually adding water to form a soft, pliable dough. Knead for 5-7 minutes.

Divide the dough into equal-sized balls.

Take one dough ball, flatten it, and roll it into a small circle. Place a portion of the potato filling in the center.

Gather the edges of the dough to enclose the filling and form a ball. Flatten it gently.

Roll the stuffed ball into a thin paratha, ensuring the filling doesn't leak out.

Heat a griddle or tawa over medium heat. Cook the paratha for a minute on each side until lightly browned.

Add ghee or oil to the griddle and cook the paratha, flipping and pressing gently, until both sides are golden brown and crisp.

Serve hot with yogurt, pickle, or butter.
