- Semolina (Sooji/Rava)1 cup
- Yogurt1 cup
- Water0.5 cup
- Ginger-green chili paste1 tsp
- Turmeric powder0.25 tsp
- Lemon juice1 tbsp
- Sugar1 tsp
- Saltto taste
- Eno Fruit Salt1 tsp
- Oil1 tbsp
- Mustard seeds1 tsp
- Curry leaves8-10
- Green chilies (slit)1-2
- Water (for tempering)0.25 cup
- Grated coconutfor garnish
- Cilantrofor garnish

In a bowl, combine semolina, yogurt, 0.5 cup water, ginger-green chili paste, turmeric powder, lemon juice, sugar, and salt. Mix well to form a thick batter. Let it rest for 10 minutes.

Grease a steamer or a plate. Heat water in the steamer.

Add Eno fruit salt to the batter and mix gently until frothy. Pour into the greased plate.

Steam for 12-15 minutes until a toothpick comes out clean.

Let it cool slightly, then cut into desired shapes.

For tempering, heat oil in a small pan. Add mustard seeds, let them splutter. Add curry leaves and slit green chilies. Pour this over the dhokla.

Add 0.25 cup water to the tempering pan and let it simmer briefly. Pour this liquid over the dhokla.

Garnish with grated coconut and cilantro. Serve warm.
