Ingredients
- Canned or Jarred Roasted Eggplant Puree15 oz can
- Tahini3 tablespoons
- Lemon Juice1-2 tablespoons
- Garlic Powder1/2 teaspoon
- Olive Oil1 tablespoon, plus more for drizzling
- Saltto taste
- Black Pepperto taste
- Sumacfor garnish

Drain eggplant puree: If using canned eggplant, drain any excess liquid.

Combine ingredients: In a bowl, combine the eggplant puree, tahini, lemon juice, garlic powder, and 1 tablespoon of olive oil.

Blend until smooth: Use an immersion blender or food processor to blend the mixture until smooth and creamy. Alternatively, mash thoroughly with a fork.

Season: Add salt and pepper to taste. Adjust lemon juice if needed.
