  • Fresh corn kernels3 cups
  • Masa harina for tamales3 cups
  • Sugar1/2 cup
  • Baking powder1.5 tsp
  • Salt1/2 tsp
  • Vegetable shortening or lard1/2 cup
  • Milk or water1.5 cups

Steps

  1. 1

Soak corn husks in hot water until pliable. Drain and set aside.

  2. 2

In a bowl, combine fresh corn kernels, masa harina, sugar, baking powder, and salt.

  3. 3

In a separate bowl, cream the shortening until fluffy. Gradually add the masa mixture, alternating with milk or water, until a soft, spreadable dough forms. Beat until light.

  4. 4

Spread about 3 tablespoons of masa onto each softened corn husk. Fold the husk to enclose the masa.

  5. 5

Arrange tamales upright in a steamer basket. Cover with husks and a damp cloth. Steam for 60 to 75 minutes, or until the masa is firm and cooked through.

Let tamales cool slightly before serving. Garnish with cinnamon if desired.
