Ingredients
- White rice1 cup
- Cinnamon sticks2
- Almonds1/2 cup
- Water6 cups
- Sugar3/4 cup
- Vanilla extract1 teaspoon

Rinse the rice thoroughly.

In a large bowl, combine the rinsed rice, cinnamon sticks, and almonds. Add 2 cups of water.

Cover the bowl and let it soak at room temperature for at least 4 hours, or preferably overnight.

Transfer the soaked rice mixture to a blender. Blend until the rice is finely ground.

Strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher, pressing to extract as much liquid as possible. Discard the solids.

Stir in the remaining 4 cups of water, sugar, and vanilla extract until the sugar is dissolved.

Chill the horchata in the refrigerator for at least 1 hour before serving.
