Ingredients
- Corn on the cob4 ears
- Mayonnaise1/2 cup
- Lime1
- Cotija cheese1/2 cup, crumbled
- Chili powder2 tablespoons
- Cilantro1/4 cup, chopped

Grill or boil the corn on the cob until tender. If grilling, char the kernels slightly.

While the corn is cooking, prepare the sauce: in a small bowl, mix mayonnaise, the juice of half a lime, and half of the chili powder. Season with salt and pepper.

Once the corn is cooked, carefully spread a generous layer of the mayonnaise mixture over each ear.

Roll the coated corn in crumbled cotija cheese, ensuring it's well-covered.
