Ingredients

  • Cooked pinto beans (from scratch or canned, drained)2 cups
  • Mexican chorizo, casing removed4 ounces
  • Onion1/4 medium, finely chopped
  • Garlic1 clove, minced
  • Lard or vegetable oil1 tablespoon
  • Saltto taste
  • Black pepperto taste
  • Water or bean cooking liquid2-4 tablespoons

Steps

    In a skillet, cook the chorizo over medium heat, breaking it up with a spoon, until browned and cooked through. Remove the chorizo with a slotted spoon and set aside, leaving the rendered fat in the skillet.

    Add the lard or oil to the skillet if needed. Add the finely chopped onion and cook until softened, about 3-4 minutes.

    Add the minced garlic and cook for 30 seconds until fragrant.

    Add the cooked pinto beans to the skillet. Mash them with a potato masher or fork. Add the cooked chorizo back into the skillet.

    Add water or bean cooking liquid, a tablespoon at a time, until desired creamy consistency is reached. Stir well to combine all ingredients.

    Season with salt and black pepper to taste. Cook for 5-7 minutes, stirring occasionally, until heated through and flavors have melded.
