Ingredients
- Whole wheat flatbreads or roti8
- Canned chickpeas2 cans (15 oz each)
- Onion1/2 medium
- Garlic2 cloves
- Ginger1/2 inch piece
- Curry powder1.5 tablespoons
- Cumin powder1/2 teaspoon
- Turmeric powder1/4 teaspoon
- Scotch bonnet pepper1/4 to 1/2
- Vegetable oil1 tablespoon
- Water1/4 cup
- Saltto taste
- Fresh cilantro2 tablespoons

Drain and rinse canned chickpeas. Mash about half of them lightly with a fork.

Finely chop onion, garlic, and ginger. Mince scotch bonnet pepper. Sauté onion, garlic, and ginger in vegetable oil until softened. Add curry powder, cumin, and turmeric, stirring for 30 seconds.

Add the chickpeas (mashed and whole), water, salt, and minced scotch bonnet pepper to the pan. Stir well and simmer for 5-7 minutes, until the mixture is thick and well combined.

Warm the flatbreads according to package directions.

To assemble, place a spoonful of the chickpea mixture onto one half of a flatbread, fold the other half over, and serve. Garnish with fresh cilantro.
