Ingredients

  • Sushi rice3 cups
  • Roasted seaweed sheets (Gim)8 sheets
  • Pork belly or shoulder200g
  • Gochujang (Korean chili paste)2 tbsp
  • Soy sauce1 tbsp
  • Garlic2 cloves
  • Ginger1 tsp grated
  • Kimchi1/2 cup chopped
  • Sesame oil2 tbsp
  • Toasted sesame seeds1 tbsp

Steps

    Cook sushi rice. Season with 1 tbsp sesame oil, salt, and pepper. Mix well.

    Cut pork into bite-sized pieces. Marinate with gochujang, soy sauce, minced garlic, grated ginger, and 1 tbsp sesame oil for at least 15 minutes.

    Stir-fry the marinated pork until cooked through. Add chopped kimchi and sauté for a few minutes until tender.

    Lay a seaweed sheet on a bamboo rolling mat. Spread a layer of seasoned rice, leaving a border.

    Place the spicy pork and kimchi mixture horizontally across the rice.

    Roll tightly using the bamboo mat. Brush the outside with remaining sesame oil and sprinkle with sesame seeds.
