- Hot water1 cup
- Cold water1/4 cup
- Scallions1 bunch
- Vegetable oil1/4 cup
- Salt1 teaspoon
- Sesame oil1 tablespoon
- Soy sauceFor dipping
- Black pepper1/2 teaspoon

Combine flour and salt in a large bowl. Gradually add hot water while stirring with chopsticks or a fork until shaggy. Add cold water and mix until a dough forms. Knead on a lightly floured surface for 5-10 minutes until smooth. Cover and let rest for 30 minutes.

Finely chop the scallions.

Divide the dough into 4-6 equal portions. Roll each portion into a thin, rectangular sheet.

Brush the surface of each dough sheet with vegetable oil and sprinkle with chopped scallions and a pinch of black pepper.

Roll up the dough sheet tightly like a jelly roll. Coil the rolled dough into a spiral shape. Flatten the spiral gently with your palm.

Roll out the flattened spiral into a thin pancake, about 6-8 inches in diameter.

Heat 1-2 tablespoons of vegetable oil in a non-stick skillet over medium-high heat. Pan-fry each pancake for 3-5 minutes per side, until golden brown and crispy.
