Ingredients

- Coriander1/2 tsp
- Greek yogurt1 cup
- Garlic1 clove

In a skillet, brown the ground lamb over medium-high heat. Drain excess fat. Stir in cumin, coriander, salt, and pepper. Cook for another minute until fragrant. Set aside.

Mix Greek yogurt with minced garlic, salt, and pepper. Set aside.

Poach eggs in simmering water for 3-4 minutes until whites are set and yolks are runny.

Warm olive oil in a small pan over low heat. Stir in red pepper flakes and let infuse for 1 minute.

Spoon the garlicky yogurt into serving bowls.

Top the yogurt with a portion of the spiced lamb.

Carefully place two poached eggs on top of the lamb in each bowl.

Drizzle the chili-infused olive oil over the eggs and lamb. Garnish with fresh mint.
