Ingredients

  • Tiger nuts (chufas)1 cup
  • Water4 cups
  • Sugar1/2 cup
  • Lemon zest1 strip
  • Cinnamon stick1

Steps

    Rinse the tiger nuts thoroughly.

    Soak the tiger nuts in 4 cups of water with the lemon zest and cinnamon stick for at least 6 hours, or overnight.

    Drain the tiger nuts, reserving the soaking liquid. Discard the lemon zest and cinnamon stick.

    Place the soaked tiger nuts in a blender with about 2 cups of the reserved soaking liquid. Blend until very smooth.

    Strain the mixture through a fine-mesh sieve or cheesecloth into a pitcher, pressing well to extract all the liquid. Discard the pulp.

    Add the remaining soaking liquid and sugar to the pitcher. Stir until the sugar is dissolved.

    Chill thoroughly in the refrigerator for at least 1 hour.

    Serve cold over ice.
