Ingredients
- Boneless, skinless chicken thighs, cut into bite-sized pieces1 lb
- Unsalted butter, softened1/4 cup
- Fresh parsley, finely chopped1 tbsp
- Garlic powder1/2 tsp
- All-purpose flour1/2 cup
- Eggs1
- Breadcrumbs (panko)1 cup
- Saltto taste
- Black pepperto taste
- Vegetable oil, for frying or bakingas needed
Steps

Mix softened butter with chopped parsley, garlic powder, salt, and pepper. Chill until firm.

In a bowl, combine chicken pieces with small dollops of the chilled herb butter. Ensure butter is distributed amongst the chicken.

Set up a breading station: flour, beaten egg, breadcrumbs.

Toss chicken pieces with butter to coat lightly in flour, then dip in egg, and finally coat well with breadcrumbs.

Heat oil in a skillet over medium-high heat or preheat oven to 400°F (200°C).

Fry the bites in batches until golden brown and cooked through, or bake for 15-20 minutes until golden and cooked.

Drain on paper towels if fried. Serve immediately.
