- Brown sugar1 tbsp
- Lime juice1 tbsp
- Peanut butter1/2 cup
- Sweet chili sauce1/4 cup
- Water2 tbsp
- Salt1/2 tsp
- Black pepper1/4 tsp
- Bamboo skewers, soaked12-16

In a bowl, whisk together coconut milk, red curry paste, fish sauce, brown sugar, lime juice, salt, and pepper. Add chicken cubes and marinate for at least 30 minutes.

Prepare the sauce: In a small bowl, combine peanut butter, sweet chili sauce, and water. Stir until smooth. Add more water if needed to reach a dipping consistency.
