A quintessential Pakistani dish, Chicken Karahi is a flavorful and aromatic curry made with tender chicken pieces, tomatoes, ginger, garlic, and a blend of traditional spices, cooked in a wok-like pan called a karahi.

Ingredients
- Chicken, bone-in, cut into pieces1 kg
- Tomatoes, pureed400g
- Onions, finely chopped2 medium
- Ginger, minced2 tbsp
- Garlic, minced2 tbsp
- Green chilies, slit2-3
- Ghee or cooking oil1/2 cup
- Coriander powder2 tsp
- Cumin powder1 tsp
- Turmeric powder1/2 tsp
- Garam masala1 tsp
- Saltto taste
- Fresh cilantro, choppedfor garnish
- Julienned gingerfor garnish

Heat ghee or oil in a karahi (wok) over medium-high heat. Add chopped onions and sauté until golden brown.

Add minced ginger and garlic, sauté for a minute until fragrant.

Add chicken pieces and sear them on all sides until lightly browned.

Stir in coriander powder, cumin powder, turmeric powder, and salt. Cook for 2-3 minutes, stirring constantly.

Pour in the pureed tomatoes and cook, stirring occasionally, until the oil starts to separate from the masala (about 10-15 minutes).

Add slit green chilies. Cover and simmer on low heat for about 15-20 minutes, or until the chicken is cooked through and tender.

Sprinkle garam masala over the karahi. Stir well.

Garnish with fresh cilantro and julienned ginger. Serve hot.
