Ingredients

- Beef broth4 cups

- Roasted red peppers (jarred, chopped)1 cup

Prepare the beef and jus as described in the Classic Chicago Italian Beef Sandwich recipe (Steps 1-6).

While the beef is resting, finely chop the roasted red peppers and drain the capers.

Return the sliced beef to the pot with the jus. Add oregano, red pepper flakes, chopped roasted red peppers, and capers. Simmer gently for 15-20 minutes.

Slice the Italian rolls lengthwise. Dip the cut sides of the roll into the hot jus mixture.

Generously pile the beef and pepper mixture onto the bottom half of the roll.

Close the sandwich. Serve immediately, with extra jus for dipping if desired.
