Ingredients
- Beef chuck roast3 lbs
- Beef broth4 cups
- Onion1 large
- Garlic4 cloves
- Worcestershire sauce2 tbsp
- Bay leaf2
- Thyme1 tsp
- French rolls4
- Provolone cheese8 slices
- Butter2 tbsp
- Saltto taste
- Black pepperto taste

Season the beef chuck roast generously with salt and pepper.

Sear the roast on all sides in a hot pan until browned.

Place the seared roast in a slow cooker or Dutch oven.

Add beef broth, sliced onion, minced garlic, Worcestershire sauce, bay leaves, and thyme to the pot.

Cook on low for 6-8 hours (slow cooker) or braise in the oven at 325°F (160°C) for 3-4 hours until tender.

Remove the roast from the liquid and let it rest. Strain the cooking liquid to create the au jus.

Thinly slice the roast beef against the grain.

Split the French rolls lengthwise and lightly toast or grill them.

Dip the cut sides of the rolls into the warm au jus.

Pile the sliced roast beef onto the bottom half of each roll.

Top with provolone cheese and melt under a broiler if desired.
